Creamy crab rice for 6 people.

We put he olive oil in a pot. T We then fry the crabs and we remove them. We add the onion. When it is half done, we add the squid and fry them just a Little. We add the dried pepper. Then, in the followin order add the minced garlic, thesweet paprika and the grated tomatoes. We now put back the crabs into the pot.

In a different pot, we boil the shrimps for 10 minutes, until the water gets the flavour. We add the broth into the pot and let it cook for 15 min. Then, we add some saffron and the Albufera rice. We slowly stirr the pot so the rice releases its starch and the broth thickens. After 10 minutes of boiling, we add the tails of the prawns. We let it boil for 18 more minutes. We let it cool off.




150 cl of olive oil

4 crabs

6 prawns

300 g squid

1 chopped onion.

2 dried pepper.

3 minced garlic cloves.

1 tablespoon of ground sweet paprika.

2 grated pear tomatoes.

7.5 l of water.

60 infused strands of saffron.

600 g of “Tancat rice” Albufera variety of Tartana Rice.
